Smoked Tofu sweet and sour

Such an easy meal that can be simmered gently in a pan with a lid or in a slow cooker. Use whatever veg you like - in this example- peppers, onions, celery. and carrots. Fry gently in some oil, add a jar of sweet and sour vegetable sauce, add the diced tofu and let .it simmer gently for an hour to absorb all the wonderful flavours. Can be served with pasta, potatoes or noodles.
