Simnel Cake

I was asked to make a Simnel Cake by someone at the Arnside Country Market. Sadly, that has been cancelled but I had bought all the ingredients and so, since I have never made one before, I thought I would do one for us.
It was interesting to make, using Mary Berry, with apricots, sultanas and cherries. The marzipan layer in the middle has dissolved into a lovely fudgey bottom and the apricots add a gorgeous vanilla flavour.
I love it! And will definitely make another one next year.
