Karma Cake

We're not short of a patisserie or two round our way, but when my wife asked me on my birthday last year what cake she should get I went straight for a Victoria Sponge. You can take your ganaches, your mille feuille, your paves and your tartelettes. Nothing beats a good sponge, raspberry jam and buttercream.

Today i was reunited after 8 years with my old friend Lucy who came to dinner armed with a home baked cake. I was absolutely delighted to see she'd brought a Victoria Sponge. Cake karma perhaps?
