Red Beans and Rice

I love Louisiana food (be it cajun or creole—and I usually don’t known which is which, as in this case), but I very rarely make it myself. I was shocked to learn tonight that my husband was not familiar with red beans and rice. I scarcely know how this is possible, but he chalks my familiarity up to my being from Florida (also on the Gulf coast, I suppose). Anyhow, it was a good version.
