Purple Sweet Potatoes...

These veg are the base for today and tomorrow’s meal. I’ve run out of tomatoes so used a small tin of tomato soup split between the two cooking trays.
But the star of the show is the purple sweet potato which is absolutely delicious. I bought them almost accidentally from Waitrose when their normal sweet potatoes were enormous.  I thought they would be the normal colour under the skin so was surprised to see they were quite a deep purple with almost a look of radish about them. 
I hope they have more if I get back there in the week.
