Quince blossom

These blossoms  turn into small hard yellow fruits  but pick and leave on a sunny windowsill and they will begin to release a delicate fragrance of vanilla, citrus, and apple. Its heady perfumed scent is completely at odds with its nobbly appearance. Because it is high in pectin it is a great addition to sorbet. See recipe.
