Rhuberry tart

Campbell’s adventures into cooking from the garden led to a request to be taught how to make shortcrust pastry.

He’d picked some rhubarb this morning and we had a stash of raspberries in the freezer so he wanted to make a tart. He did briefly consider including a nettle purée but decided the flavour just wasn’t going to fit (phew!).

Seems the lad has inherited the family knack of a good crisp but crumbly shortcrust pastry. My Gran’s pastry was legendary. She always said ‘cold hands, warm heart make good pastry’ Mind you, she also said making pastry was great for cleaning under your fingernails, so not sure if her sayings are to be taken seriously.

Campbell did a grand job. Pastry was perfect, filling just the right balance of sweetness and tart zing. Delicious!

And his fingernails were very clean....
