Food of the future

Not everyone who's following my blips know that I'm an exhibition coordinator at Heureka, it's a Finnish science center. We are designing an exhibition about future. One subject that we'll have to deal is the food of the future. Of course we can think of many things how our food will different in the future, but will it look the same as now, how will it taste? How are we able to give any real feelings about the food to our visitors without real samples?

In the future we will surely eat a lot less meat and more vegetables that give the same proteins. Seaweed might be a lot more common. Some or even most of the vegetables and harvested plants will be at least a bit genetically modified (and that is the only way to survive- so I see it as a good thing). How about cockroach sushi?
