'Fluffy Lemon Cake'........!

Hi to all my Blip people and a huge "Meow" from Kitty for all his pals....He said to me today ..."Annie how come you haven't taken one of those Blippin pictures of me in ages"????.....
Just realised that I haven't been on Blip for over a week.......and really missed it!!
but not been well with some kind of viral infection and altho' took some photos just didnt have the energy to load them....
had to try to get some rest while keeping everything 'ticking' over aswell....!!


Hopefully all back on track now....!
Had some energy today and got back baking......this is my Lemon Curd Cake...
it is one of our favourites but I don't make it too often...
it is the cake that separates when cooking and you get a lovely light sponge cake on top and a tangy lemon curd on the bottom...it's really delicious..
with some raspberries and a good dollop of Greek yoghurt....
and of course as always in our house an Apple Pie for the non-cake eaters......!

Will Blip Kitty tomorrow to keep him happy...
he's nursing a sore paw at the moment......and if it doesn't improve.....it may have to be a trip to the Vet......now if he could sort me out aswell ...it would be great!!!!!!
