Courgette fritters

My Mum gave me a copy of the Sunday Times colour supplement to read, because she thought I’d be interested in a piece they had published about Boris Johnson.

Much more interesting was the section on Greek inspired recipes. These courgette fritters were splendid.

Unlike the fairy lame attempt the ST had at having a pop at Johnson.
