69 hardworkers start the process which ends with our delicious after dinner cheese.
Don’t count them, there are quite a lot off the picture at the left.

For their labours they get free bed and breakfast and medical treatment.

Their labour consists mainly of eating and many of us would not find that onerous. So perhaps their life is not too bad after all.
