What is it?

On our walk this morning with some friends from the village we came across fields of this stuff.
Our friends said it was a seed crop for the birds but it wasn’t planted as a beetle strip it was in full fields.
Nearest thing we could find on line was bunny-tail grass which is ornamental or a type of millet although all the millet varieties seed heads were longer than this.
