Elderflower champagne

It is a slow process. Seven years ago we planted the trees and this year they have at last produced some blossom. These we picked and left to soak for a few. days and then bottled. No hints of any bubbles after three days, so I cheated and added some yeast and now the bubbles are being produced as hoped for. Another ten days and we should be able to taste  the fruits of seven years work....
A half decent day and so a brief stroll on Baleshare beofre the weekly shop, wearing a mask for the first time. Odd not being able to recognise anyone in the shop!
