Artichoke, of the globe form

I do like these plants and they do taste nice but living in Scotland means they are generally over by the time they get going as the season is short, therefore lots are left on the plants. Blue tits love them as they seem to be full of earwigs and other bugs. Not sure anything eats the seeds.
