Hey guys hope all is well, thanks for all your thoughts for my sister Bridie she is doing ok and getting well looked after. Hopefully all will turn out well. Been in my pjs all-day up until 6 when I decided I needed to get out! me needing to get out as never happened in as long as I can remember! the headache lifted and the walk felt good. Im defiantly improving :)

The beet burgers the night before last were ok, but I wont be rushing to make them again! To be honest a cheese and beet sarnie would have been better :)

The peri peri chicken on the other hand was amazing and so low in WW pro points. 4pp per breast.

right recipe for peri peri chicken, serves 4. 1 red, 1 yellow pepper, 2 cloves garlic, 2 tsp of paprika, 2 tbsp of red wine vinegar, (if you dont have any red wine vinegar Tesco sell it for 80p) salt pepper to taste. chop peppers garlic roughly then place in food processor along with red wine vinegar, paprika, salt and pepper. wizz up till its rough texture. If you like chilli add some chilli flakes too, but to be honest it dont need it the flavour is superb. Place the breast in baking tray make 3 slits in in each breast and cover with the marinade. Leave 1 hour minimum! I cooked mine on 200 for 40mins but it will cook alot quicker than that, it was lovely and moist, turn once while cooking :) Enjoy :P I would give it 9 out of 10 NOMELICIOUS :p
