Penne with tofu alfredo, and salad. Wine: Renieri Rosso di Montalcino 2017.

I was a teenager when I learned how to make an “alfredo” sauce with silken tofu instead of cream. It has been quite a while since I last made it. The wine, unfortunately, was undrinkable on account of very pronounced brett taint.
