Mexican Chicken & Rice Soup

Made Mexican Chicken & Rice Soup for the first time. Recipe here. I can thoroughly recommend it. Very tasty and very hearty. Had it as a main meal with some nice bread. I used chicken breast just because I prefer that to chicken thigh. Would be nice as a vegetarian soup if the chicken was replaced with maybe some small button mushrooms. Might try that next time.
