Roast carrot hummus
Roast carrot is delicious in itself, but roasted with garlic, olive oil and a little cumin and then pureed with orange juice and zest and tahini (add lemon juice if you like your hummus a little tart or ginger for a warming flavour) it makes a great dip. Left over dip is very tasty used as a bed upon which to roast chicken pieces, especially the version with ginger.
