Maple Syrup Time
I missed the festival at the Harbour House Hotel yesterday, but after morning coffee today I took a wander around the Hotel's farm and found Robert beside the evaporator. He told me it takes 100 litres of sap to produce 1 litre of syrup. They have 100 Broadleaf Maples, not sugar Maples and last year they got 7 litres of syrup out of their trees. It is a labour of love and a huge undertaking. The syrup which would be way too expensive to sell, gets used at the restaurant. So if you're ever there order some pancakes with syrup, divine.
