Sweets for my Sweet

A couple of days ago my cousin in Alaska posted one of her regular ‘back home’ posts - and this one intrigued me.

Heritage recipe for home made macaroons with left over potato....

I looked. I checked other recipes...

Yip. Potatoes.

Macaroons I love and are the cause of my worst email ever.... and I didn’t even realise it was potatoes

So tonight I took a potato.... ours.

Boiled it, mashed it and then stirred In the icing sugar. And stirred in the icing sugar; and stirred in more icing sugar.

And then I put them in the freezer and then I covered them in coconut, half toasted.

And now I’ve put them back in the freezer.

Not because the recipe told me to.

But because they are scaring the bejeesus out of me ....

I don’t think I can eat them!


How could they ever be all warm and moist inside?
