Stuffed shells

My son Brett did most of the work of preparing these stuffed shells which had ricotta, baby portabella mushrooms and scallions along with coarse grated Parmesan and mozzarella. The sauce was a basic white wine and garlic sauce with Parmesan and mozzarella and spinach. Poured over the shells and baked for 30 minutes.

We are definitely cheesaholics in our family. Brett also had cheddar and jalapeño beer bread baking when I arrived.


The stuffed shells were good but they needed something else...chicken or Italian sausage per the guys. The taste was very bland and we like a little pep in our food. The beer bread was excellent!

Enough shells for leftovers another day!
