Empanada

After my online input sessions this morning on how to do writing lessons and a video observation on task-based learning, I decided to make spinach and feta cheese empanadas for lunch (lasted two days and snacks).  The pastry is shop-bought, but hey ho, not to worry.  I smiled to myself as I was making them, as our Catalan next-door neighbours Merce and Ferran were off out for an Indian lunch.   Shouldn't it be the other way round?
