last night's supper is back on the menu:  roasted cauliflower cheese will be embarked upon shortly.

Roasted Cauliflower Cheese

1 medium cauliflower, deconstructed 
1 shallot, chopped
bacon, chopped &  fried to crispy deliciousness
grated cheese 
milk
butter
flour
thyme & nutmeg 

roast the cauliflower for 10 minutes in a hot oven
fry the bacon pieces to a nice crisp and blot on kitchen towel
fry the shallot and add to the cheese sauce along with thyme 
and pepper.

scatter the bacon on top of the cauliflower cheese along with a generous grating of nutmeg, plus some more fresh thyme.

& into the oven to heat up.
