Better late than never

I know it's a bit late but I made christmas cake today.

I can't actually remember the last time that I made one. I am not sure I have since we lost mum so at least 10 years. I've not felt like it for such a long time. I always intend to but then never quite get there. Christmas baking was a very mum thing to do. I do normally make mince pies though (well I cheat I buy pastry and a jar).

When I was little I would only eat the icing never the cake. I have brought marzipan as well and some glycerin to make Royal Icing I can't stand sugar paste that now seems to be what everyone uses and even cakes that say they have royal icing on just don't. At least not proper royal icing. Oh I've just remembered I will need to get some apricot jam.
