Tongue!
I spared you the detail of the raw tongues, but only because they were already in the pot and steaming away when I got home! Later they were dropped into cold water to help to remove the skin, and then pressed. We use loaf tins as we don’t have a suitably sized round tin. I was allowed to be chief taster as soon as the tongues were removed from the pot - didn’t expect a slice of boiling hot meat to be dropped onto my hand though - ouch! It tasted very good. The majority will now be put into the freezer, otherwise it will probably disappear very quickly! Last outdoor sing before Christmas for community choir this afternoon. Better than last week as we got the harmonies right! The Boss (choir leader) seemed to like his presents. He has so many hampers from his various groups that he probably won’t need to buy any food in for Christmas - well, maybe a Turkey!
