Sausage and Cider Casserole

Today’s picture is of the sausage and cider casserole that I made for lunch; the recipe is in my new cookery book. As usual I tweaked it a bit and finished it in the oven rather than on top of the cooker. As the oven was on I made roasted potatoes and vegetables so it was more like a Sunday lunch than a Monday lunch. The extra is my husband’s lunch, we always have a lot of vegetables and not so much meat, but he said it was delicious and that I should make it again. 

We have a U3A Zoom meeting this afternoon, although I am not quite sure how that will work.

The temperature today was six degrees Celsius at GMT noon.
