Steak
Sous vide strip steak, turnips sautéed with their greens, and Vella garlic Jack cheese. Wine: Château Franc Pipeau St. Émilion 2000.
A lovely dinner. I have been curious to try this maker’s cheese for a while. Vella is a 90 year old company in Sonoma known for their traditional California Jack cheese. (They also invented Pepper Jack.) This had a lovely fresh cream taste and texture and was leagues away from any Jack I’ve had before (usually a bland, highly processed tasting cheese). I look forward to trying some others (including a couple of dry Jacks).
