Swap peaches for apricots
Finally got around to trying out the recipe of 21 January 2021 with peaches instead of apricots.
Although combining baked fruit with the flavours of rosemary, vanilla and orange still seems a little counter-intuitive - especially the rosemary - it works just as well with peaches as it does with apricots. If not, then even better!
It will cost you one whole vanilla pod for a dessert for 4 people, but it really is the essential ingredient. The peaches are baked with pieces of the de-seeded pod laid throughout (plus orange juice and zest, honey and the rosemary); and the vanilla seeds give the yogurt/cream/honey sauce its distinctive flavour. So I don't think vanilla essence is going to cut the mustard, so to speak.
Passionfruit is not included in the recipe, but we had a few lying about, so we threw in some of those as well. We were anything but disappointed.
Coming from non-dessert folk in general, and non-fussy-dessert folk in particular, this dish is really something.
