Stew
Corsican beef and pork stew with porcini mushrooms and tomatoes served on egg noodles. Wine: Terra d’Uro Toro Finca la Rana 2012.
The stew was fantastic and the wine (a Tempranillo) was pleasant.
I had meant to serve chard on the side but was distracted by figuring out what pot to use for noodles and forgot to make it. My usual pasta pot (an 8 quart) is awaiting warranty replacement after a layer separation in the bottom rendered it unable to boil water, and I used the pot I had been using for pasta in the interim (a 5 qt enameled cast iron) for the stew. It turns out my pressure cooker is very slow as a regular pot—so I’ll have to whip out the stock pot (12 qt seemed overkill for pasta) if this happens again.
