The need to bake ...

The day started with the old man I live with getting his first vaccination :) he’s in the age bracket above me. It won’t change our lives just yet but it’s hopeful.
Then I came back and really wanted to bake these courgette and halloumi muffins for elevenses, but didn’t have a courgette! So I went into town and got one + a library book ready to be collected. Then I baked these and they are DELICIOUS! Could barely wait for them to be cool enough to try.
The library book I picked up was The Dry, by Jane Harper. It’ll tell you how good it is when I say I’ve spent several hours on the sofa engrossed.
