A cake for Terry.
Today is Terry’s birthday. It’s a big one - 60. I’ve been asked to make the cake - a challenge as he’s an excellent baker and cake decorator. In fact, he can turn his hand to most things.
I can only manage ‘naked cakes’ - the sort where the crumb peaks through the crudely spread frosting and it’s acceptable rather than a mistake. Even then, I find it difficult. At one point this morning, there was a cake-avalanche in the fridge as the top layer slithered down the side. A semblance of stability was restored by shoring up the cake with wooden skewers. The citrus candy segments are a special request, and the Amazon cake toppers add a celebratory rather than cohesive touch. But underneath it all is a rather tasty triple lemon layer cake, as I discover when it’s cut this afternoon.
Terry and his husband Rob are our very special neighbours - the sort of people who always think of others. He’s clearly loved, and all day long, people have been dropping off cards and gifts. Lockdown doesn’t make for the most memorable celebration, but in the circumstances, I think he’s enjoyed his day.
