Spring sushi

I've been playing with textures and pickles to accompany my raw fish.

The key thing that holds this dish together is the green herb sauce. It contains silken tofu, fresh coriander and chives, lemon and fish sauce. If you want a hit of freshness and vitamins it will put a spring in your step!

Other things are lightly pickled cauliflower, spring onion and fresh pepper,  fried rice noodles and edible flowers.
