Pickled Eggs

What to do with lots of eggs? Boil, peel, stuff in a jar, add vinegar, salt, wine, pickled beet juice and some spices.
Sadly, these aren't our own eggs even though we have 7 hens. Our hens are old and don't lay much at all anymore. The next best thing though is to have our neighbor set out his cooler with eggs for sale.
My partner surprised me with this when I came home from work.
