The strategic olive reserve

These are some of last autumns’s olives now put up for an eventual use. They are small and not really table olives- big pups and thin flesh. But I like their bite and very oliviness. And the process to get to this point has been a long one.
20 days of daily water change
Then a month or more in at 10% salt solution
Then a month or more in at 7.5% salt solution
And then bottling in a 5% salt solution.

The blemishes on the olives are caused by the larvae of the Olive Fly. This year I am going to put up pheromone/insecticide traps for them that are compatible with Italy’s organic standards.
