Cleaning detail
This is what I know here as a Kaffir lime and in case that causes offence it is also known as a Makrut lime. I have a tree that is doing pretty well in my back yard. I tend to use the leaves more than the fruit in cooking although if you hit the fruit with a large mallet, you could get some juice out of it. It has extremely thick skin which is also good in cooking. Speaking of which, I should think about doing a green curry soon where this and the leaves will feature.
The fruit are quite small hence the use of the tinies to do the cleaning.
