Bee on apple mint

My wife observed that we have different populations of bees visiting different flowers in the same part of the garden. The apple mint here seems to be favoured by bees with a large white coloured abdomen, while just a few feet away the flowers were covered with stripy bees. Not knowing anything about either flowers or bees, I can't really go into any more detail... do bees have preferred flowers? Would the honey from these taste of mint?
