Victoria Sponge

Funeral wake yesterday and a memorial Day today for a very dear friend who sadly died a couple of months ago. Today was the first opportunity to remember her with her family and friends. Selection of food was excellent but as is the norm, far too much. This cake came home with us. We will try to do it justice!
