Soupe au Pistou

Soupe au pistou. Wine: Domaine Tabordet Le Champs des Vignes Pouilly Fumé 2019.

Somehow, I have never made a soupe au pistou before tonight. I've been meaning to make one sometime for years. Turns out it is very good, and I should keep it in mind as a good use for the massive bunches of basil the CSA sends in the summer. The Pouilly Fumé was lovely. A rosé would have suited the soup better, but we don't have any on hand.
