Mint Jelly (part 1)
The Darnaway Chef has decided to make his own Mint Jelly having been given some mint leaves from friends in the Scottish Borders - so yours truly decided to drag himself away from his computer and make up a collage of photos showing progress today.
Ingredients: Granny Smith Apples, lemon juice, water, mint leaves, sugar.
So, the apples were cut into thick slices and combined with the water, lemon juice and mint leaves, boiled for ten mins, strained through a muslin-lined sieve and left to stand overnight. More tomorrow - perhaps …..
