Lavender

As soon as we have a dry day I will collect some lavender heads. Picking before full bloom to harvest the best flavour. When dry, I will store for my apple and lavender gelée. The lavender is infused in the hot gelée, in a muslin bag for 4 to 5 minutes. Plus One flower head is added to each jar.
