Bubbling

This batch of sauerkraut seems very lively - smells almost done, after less than a week. The bulk of it is standard white cabbage, but I included a few stunted red cabbages that had never come to anything but were still lurking amongst the weeds at the allotment. Their leaves were red, and quite teuch, but strangely the colour has leached out of them leaving green leaves and making this rather lurid pink liquid.

Time for the all important taste test tomorrow.....
