Jamaican veggie curry with brown rice

Had a Mindful Chef delivery yesterday with three meals for 2 people which I mostly divide into six meals for one but today took the curry recipe with ingredients to a friend and cooked there before the zoom prayer meeting. I often find that the quantities are enough for three so I have a box left over for tomorrow of the curry. All the rice was eaten! The curry was hot as I should have expected from a Jamaican curry. The best part about these packs is that there is no waste
