Joy (Pt 2)
Spicy Carrot Muffins - with extra walnuts, cos I like walnuts.
These are a great little treat at Easter.
Here's the recipe:
200g plain flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon each of cinnamon, ground allspice, mixed spice, ground ginger, nutmeg (I don't bother with the nutmeg)
100g chopped walnuts (you can use more if you want)
1 large carrot (about 100g) grated
2 large eggs
1/3 cup light olive oil ( I just used canola)
200g sugar
Preheat oven to 180 celsius. Grease and line a 12-hole muffin pan with paper cases.
Sift the flour, baking powder, baking soda, salt & spices into a bowl. Add walnuts. In a seperate bowl whisk together the eggs, oil & sugar until creamy & well combined. Add the grated carrot & mix again. Make a well in the dry ingredients, then pour in the wet ingredients and quickly combine with a spoon or spatula. Do not overmix.
Spoon into paper cases & bake for about 30 minutes. Leave in pan for about five minutes then lift out & place onto a cake rack to cool.
Makes 12.
