Soon To Be Syrup !

Ah - spring seems finally to be on its way. +6c today and freezing nights make for conditions conducive to persuading the sugar maple trees to give up their sap.

Most maple syrup production is now highly modernized with vacuum pumps, plastic tubes, preheaters, reverse-osmosis, and who knows what else, but thankfully there are still a few traditionalists doing it the old way. I stumbled upon one such small maple bush today. I hope they are able to get some kids to participate and see how it used to be done - and to dribble a bit of boiled down sap in the snow for maple candy - delicious!
