Banana Bread
Ingredients
2 overripe bananas
2 cup of oats
2 large eggs
½ tsp of cinnamon
¼ cup of honey
½ tsp of baking soda (also known as bicarbonate
of soda)
1 tbsp of sunflower seeds
1 tbsp of pumpkin seeds
1 tbsp of flaked almonds
Method
Preheat oven at 180 degrees.
Add the bananas, oats, eggs, cinnamon,
honey and baking soda into a food
processor.
Blend for a couple of minutes until you have
a smooth mixture (don’t over mix, can also
mix in a bowl).
Line a loaf cake tin with baking paper.
Pour in batter, then sprinkle the seeds and
almonds on the top.
Pop into the oven and bake for around 20-
25 mins. (mine took 35mins, this oven!)
Keep checking while it’s cooking, place a
skewer in the middle of the bread and if it
comes out clean, it’s ready.
Take out of oven, leave to cool before
slicing.
