New Recipe
A rainy day in town so decided to fill my day with cleaning and sorting out old stock out of date dried groceries in the pantry and the fridge. Found some lovely ingredients in the fridge and decided to make a Mediterranean stuffed capsicum. Filled with all sorts of flavours. I realised I have missed these flavours since we returned from Bahrain. In the stuffing I had soaked rice and lentils in a bowl of water. Cooked mince rice lentils quinoa with onion and various flavours of cumin cinnamon nutmeg cloves ginger garlic pepper turmeric saffron and lemon juice. Let it cool and stuff the capsicum with the filling and pour in canned tomato pesto with lemon juice and bake in the oven to cook until its tender.
