Salt!
Bacalhau. I first came across salted cod on a job in Stavanger. I enjoyed the meal but felt pretty rubbish the next day. Perhaps it had been too salty (residually) for me, but I’ve had none in the 20 years since.
More interesting is that we now live near West Bay, in Dorset, from where fishermen would sail to Portugal to buy salt, then to the Americas to catch the fish which they would preserve with the salt.
