Lentils

Lentils, and salad with tomatoes, radish shoots, and blue cheese dressing. Wine: Château Haut Nadeau Bordeaux Supérieur 2005.

I improvised a blue cheese dressing today that was mostly just blue cheese. I added a splash of sherry vinegar and just enough water to break it down into a slurry, then added just a bit of safflower oil. It was awesome. It tasted like blue cheese, not like salted cream with the occasional whiff of blue cheese.
