Sue's (banging!) mincemeat recipe

This recipe is full of flavour and vegetarian (vegan if you choose the right brandy) I think it's the fresh ginger that takes it to another level. let me know what you think.

Ingredients
75g muscovado sugar
300g fresh cranberries
1 teaspoonful of ground cinnamon
2cm cube of fresh ginger, finely chopped
3 cloves finely crushed
75g currants
75g raisins
30g dried cranberries
Juice of two clementines and zest of one (small easy peel clementines are really hard to zest, don't worry if you can't manage it)
Splash of brandy to deglaze the pan (or vodka if you want to be vegan)
1 tablespoon of vanilla paste
100ml maple syrup


Method
Dissolve the sugar in the maple syrup, add the fresh cranberries and heat until boiling, add the rest of the ingredients apart from the alcohol. Return to the boil then simmer for 20 minutes. Take off the heat, cool for 5 minutes, then add the alcohol to deglaze the pan, stirring continuously. See extra.

Cool slightly then transfer to a sterilised glass jar.

When fully cold, store in the fridge.
