Veganuary

Apparently Veganuary is a thing now. A portmanteau of ‘vegan’ and ‘January’, in case you didn’t realise.
I’m not doing it - I blew it last week with a meat pie! But we do eat more ‘plant based’ (another term I dislike) food than ever before.
And I didn’t take any other photos today.

So here’s a butternut squash, coconut and butter bean soup/stew. And it was delicious.
